Step 1
Add Dry Wheat Berries (1/4 cup) to 1 cup water, bring to a boil then simmer for an hour or until tender, drain and set aside.
Step 2
While the wheat berries cook, add Spring Mix and Baby Spinach (5 cups) to large bowls, layer with Canned Chickpeas (1/2 cup) , Fresh Blackberries (1 cup) , Shredded Cheddar Cheese (1/4 cup) , Cauliflower (1 1/2 cups) and Pepitas (1/4 cup) .
Step 3
Once the wheat berries have cooked and cooled, add to salad, top with dressing of choice and serve.
