Add Dry Wheat Berries (1/4 cup) to 1 cup water, bring to a boil then simmer for an hour or until tender, drain and set aside.

While the wheat berries cook, add Spring Mix and Baby Spinach (5 cups) to large bowls, layer with Canned Chickpeas (1/2 cup), Fresh Blackberry (1 cup), Shredded Cheddar Cheese (1/4 cup), Cauliflower (1 1/2 cups) and Pepitas (1/4 cup).
