Preheat the oven to 350 degrees F (175 degrees C), and line a baking tray with baking paper.
Add the Mozzarella Cheese (1 1/2 cup) and Butter (4 tablespoon) into a microwave-safe bowl. Place this into the Panasonic Microwave Oven on high for 2 minutes or until melted and gooey.
Into a large bowl, add Instant Dry Yeast (2 teaspoon) and Stevia (2 teaspoon). Pour the Water (2 tablespoon) and mix well, until it starts to bubble and foam. Leave to stand for 1 minute.
Add Almond Flour (1 cup), Baking Powder (1 teaspoon), and Salt (1/2 teaspoon) to the yeast mixture. Gently mix everything together with a butter knife. You'll end up with a sticky dough.
Add the Xanthan Gum (2 teaspoon), Egg (2), and the melted cheese mixture. Mix everything together, and wet your hands if you're handling the dough as it's quite sticky. Leave the dough to proof and rise for 30 minutes in a warm area.
If making the topping, mix White Sesame Seeds (1 tablespoon), Black Sesame Seeds (1 tablespoon), Poppy Seeds (1 teaspoon), and Garlic Salt (1/2 tablespoon) together in a bowl. Set aside,
The dough should have doubled in size by now. Using wet hands, take pieces of dough, roughly the size of small hamburger buns, and place on the lined baking tray. Flatten them slightly, and make a big hole in the middle, as they expand when baking.
Brush the bagels with the Egg (1), and sprinkle them with the sesame seed mixture. Bake for 20 to 25 minutes in the preheated oven, or until golden brown.
Bring it out of the oven and leave to rest for 5 minutes before serving. Store in an airtight container, if saving for later. They're also great if you freeze them! Cooking results may vary depending on microwave oven used.
