Step 1
Preheat oven to 480 degrees F (250 degrees C).
Step 2
Grab the ingredients for the rub:
Oranges (2)

Garlic (1 clove)
,
Pine Nuts (2 Tbsp)
,
Seasoned Salt (1 Tbsp)
, and
Fresh Oregano (1 tsp)

Step 3
Blend all the ingredients together.
Step 4
Puree until smooth. Set aside.
Step 5
Take your
Pork Ribs (1 rack)
if too excessive fat, trim some off.
Step 6
Place the ribs bone down on a baking tray and dress them with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 7
Pour the marinate and make sure it coats the whole rack.
Step 8
Bake for about 50 minutes. Give it 10-15 minutes to set outside the oven.
Step 9
For the vegetables, just cut the
Corn Cob (1)
into 4 pieces.

Slice the
Onion (1)
into wedges and dice the
Potatoes (2)
. Dress them with
Salt (to taste)
,
Ground Black Pepper (to taste)
, and a drizzle of
Extra-Virgin Olive Oil (1/4 cup)
.

Bake at 400 degrees F (200 degrees C) for about 30 minutes.

Cut in between ribs and serve them nice and hot. Enjoy!
