In the clay mortar and pestle, mash the Thai Chili Pepper (2) and Garlic (1 clove).
Shred the Fresh Papaya (1) using a mandoline. Also shred Mango (1) and Carrot (1).
Put a handful of shredded vegetable and fruit into the mortar and pestle and mix. Then mash together the remainder of the papaya and Cherry Tomato (10). Add the Fish Sauce (1 tablespoon), Lime (1), Granulated Sugar (1 teaspoon), and mash together.
Add crushed Peanuts (10) on top for extra texture. Serve cold.
