Hijazi coffee (also known as almond coffee, white coffee or sweet coffee) is a popular drink in the Hijaz area of Saudi Arabia. It uses ground almonds in place of ground coffee beans so it has no caffeine but remain velvety smooth and rich without being overly so.

Cooking Instructions
1.
Boil the Almonds (1/2 cup) in water for 2 minutes.
2.
Peel and grind the cooked almonds in a food processor or mortar until the granules are 2-3 millimeters in diameter.
3.
In a pot, place 3 cups of the Milk (4 cups) and Granulated Sugar (4 Tbsp) over medium heat.
4.
Bring to a boil while continuously stirring. Then, remove the pot from the heat.
5.
Dissolve the Rice Flour (4 Tbsp) in the remaining cup of milk. Add to the hot milk and stir. Then, return the pot to the heat.
6.
Add the almonds and stir continuously until you get the desired consistency.
Garnish with Simply Organic Cinnamon, Ground (to taste), Slivered Almonds (to taste) or as preferred.
