Step 1
Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with
Nonstick Cooking Spray (as needed)

Step 2
Slice the
Beets (6 1/2 cups)
as thin and evenly as possible. You can use a mandolin or a very sharp knife. The slices should be thin enough that they curl slightly at the edges.
Step 3
Put the beet slices in a large bowl and drizzle them with
Olive Oil (1 Tbsp)
,
Dried Rosemary (1/2 Tbsp)
,
Salt (1/2 tsp)
and
Freshly Ground Black Pepper (1/8 tsp)
. Using your hands or tongs, toss until evenly until coated.
Step 4
Place the beets in a single layer on the baking sheet. Bake until crispy, about 17 to 20 minutes depending on oven strength.
Step 5
Let cool for a few minutes then serve alone or with dipping sauce of choice.
