Keep the beet chips in a resealable container at room temperature for up to 10 days.

Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with Nonstick Cooking Spray (as needed).

Slice the Beets (6 1/2 cups) as thin and evenly as possible. You can use a mandolin or a very sharp knife. The slices should be thin enough that they curl slightly at the edges.

Put the beet slices in a large bowl and drizzle them with Olive Oil (1 Tbsp), Dried Rosemary (1/2 Tbsp), Salt (1/2 tsp) and Freshly Ground Black Pepper (1/8 tsp). Using your hands or tongs, toss until evenly until coated.

Place the beets in a single layer on the baking sheet. Bake until crispy, about 17 to 20 minutes depending on oven strength.

Let cool for a few minutes then serve alone or with dipping sauce of choice.
