In a large bowl, mix together the Ground Pork (12 oz), Scallion (1 bunch), Toasted Sesame Oil (1 Tbsp), Salt (to taste), and Freshly Ground Black Pepper (to taste) until just combined (try not to overmix or the burgers will be tough).

Form the meat into 2 patties. Press your thumb into the center of each patty to create a small indent - this will help the burgers cook evenly.

Heat the Butter (1 Tbsp) in a large skillet over medium heat. When the butter has melted and is very hot, turn up the heat to medium-high and add the burger patties. Cook for 4 minutes on each side.

Once the burgers have cooked, transfer to a plate and let rest for at least 5 minutes.

Meanwhile, mix the Sriracha (1 Tbsp) and Mayonnaise (2 Tbsp) together in a small bowl. Add more sriracha if you want more spice!

Top the burgers with the Sriracha mayonnaise and serve on hamburger buns or with large pieces of lettuce to form a “wrap”.
