Combine Oat Flour (2 cup), Baking Powder (2 teaspoon), Ground Cinnamon (1 tablespoon), Salt (1/4 teaspoon), Ground Cloves (1/4 teaspoon), Fresh Ginger (1/2 teaspoon), and Ground Nutmeg (1/2 teaspoon) in a bowl and mix well.
Whisk together Pumpkin Purée (1 cup), Unsweetened Almond Milk (1 cup), Orange Juice (1/2 cup), Egg (2), and Coconut Oil (1 tablespoon) in a separate bowl.
Fold dry ingredients into wet until combined. Lightly grease the waffle iron with Grapeseed Oil (to taste) and pour the mixture into it.
Cook according to the instructions of your waffle maker.
Add toppings of your choice: I used pumpkin seeds, maple syrup, and a sprinkling of cinnamon.
