Step 1
Combine
Oat Flour (2 cups)

Baking Powder (1/2 Tbsp)

Ground Cinnamon (1 Tbsp)

Salt (1/4 tsp)

Fresh Ginger (1/2 tsp)
, and
Ground Nutmeg (1/2 tsp)
in a bowl and mix well.
Step 2
Whisk together
Pumpkin Purée (1 cup)
,
Unsweetened Almond Milk (1 cup)
,
Orange Juice (1/2 cup)
,
Eggs (2)
, and
Coconut Oil (1 Tbsp)
in a separate bowl.
Step 3
Fold dry ingredients into wet until combined. Lightly grease the waffle iron with
Grapeseed Oil (as needed)
and pour the mixture into it.
Step 4
Cook according to the instructions of your waffle maker.
Step 5
Add toppings of your choice: I used pumpkin seeds, maple syrup, and a sprinkling of cinnamon.
