You can easily leave out the coffee and use 1/4 more of the almond milk or milk of your choice.

Add Unsweetened Vanilla Almond Milk (3/4 cup), Banana (1), 100% Pumpkin Purée (1/3 cup), Coffee (4 Tbsp), Protein Powder (2 Tbsp), Ground Flaxseed (1 Tbsp), Ground Cinnamon (1 tsp), Pumpkin Pie Spice (as needed), Stevia (2 packets) and Ice (1 handful) to high power blender, blend until smooth.
