Add the zest, 2 Tbsp of juice from the Lemon (1), and Honey (1 Tbsp). Stir to combine and allow to macerate for 10 minutes, or until the juices are running from the strawberries.

Place Arugula (5 2/3 cups) in a large bowl. Tear the Fresh Basil (1 cup) and Fresh Mint (1/2 cup) into smaller pieces (small leaves can remain whole). Toss herbs and arugula gently together with your hands.
