Hard-boil the Egg (8) by placing in 1-inch of cold water and heating, covered, for 13 minutes. Run under cold water once time is up so they don't overcook.
Dice the Gouda (8 ounce), Smoked Beef (6 ounce), Onion (1), Cucumber (1/2), Tomato (1) and Hass Avocado (1) to your preferred size.
Add Herb Vinaigrette (1/2 cup). Peel and quarter the eggs, add them to the other ingredients, mix carefully and adjust seasoning to taste. Plate, serve with Tarallini (to taste).
