Add Rice Vinegar (1 Tbsp) with Granulated Sugar (1 Tbsp) to the medium bowl and mix until sugar is dissolved.

Slice Small Cucumber (1) on an angle into 1/4 inch thick slices and toss into pickling liquid; allow to pickle until plating.

Place 2 slices of Sourdough Bread (4 slices) on a cutting board.

Lay 2 slices of American Cheese Slices (4) on each slice of bread; overlapping to ensure bread is fully covered. Top with remaining bread slice; set aside.

In a medium pan over medium heat, add Unsalted Butter (2 Tbsp). Once the butter melts, add the sandwiches.

Cook the sandwiches 3 to 4 minutes on each side or until the cheese is melted and the bread is golden brown.
