Step 1
Using a peeler, peel the skin off the
Cucumbers (5 cups)
. Cut off the sides. Divide the cucumber in half and in half again.
Step 2
Remove the seeds and cut into bite sized pieces.
Step 3
Soak and wash the cucumber to remove any dirt. Drain well.
Step 4
Cut the
Chili Pepper (1)
into small pieces.
Step 5
Mince the
Red Bird's Eye Chili Pepper (1)
, if using. Mince
Garlic (2 cloves)
.
Step 6
Add oil to a work and heat.
Step 7
Add in garlic and
Salt (to taste)
. Stir fry garlic until slightly toasted.
Step 8
Add in sliced cucumber.
Step 9
Add in
Chili Powder (1 tsp)
and continue to saute for a few minutes to let the cucumber absorb the flavor.
Step 10
Add large chili and mix evenly. Add one cup of water, bring to a boil, and simmer for ten minutes. Stir occasionally.
Step 11
After ten minutes, add another third of a cup of water and season according to taste. Bring to a boil and shut off the heat.
