Preheat oven to 400 degrees F (200 degrees C). Wash and trim
Baby Beets (1 2/3 cups)
and place on a piece of aluminum foil.
Gather the sides of the foil and bring together to form a sealed parcel. Place in the oven and roast for 1 hour.
Remove beets from the oven and allow to cool for a few minutes. Carefully peel with your fingers and cut into quarters.
Arugula (3 handfuls)
on a large plate.
Top with quartered roast baby beets.
Bresaola (8 slices)
Dot with pieces of
Goat Cheese (1/3 cup)
Walnuts (1/3 cup)
Extra-Virgin Olive Oil (1 splash)
Aged Balsamic Vinegar (1 splash)
. Season with
Sea Salt and Pepper (to taste)
and finish off with a sprinkle of
Microgreens (1/4 cup)
