Step 1
Peel the
Sweet Potatoes (2 cups)
and
White Sweet Potatoes (2 cups)
and dice them up finely. Add them to a mixing bowl.
Step 2
Sprinkle with
Olive Oil (as needed)
and
Dried Mixed Herbs (1 tsp)
. Season with a pinch of
Salt (to taste)
,
Ground Black Pepper (to taste)
, and
Garlic Powder (to taste)
.
Step 3
Preheat oven to 400 degrees F (200 degrees C).
Step 4
Stir the potatoes well. Place a wok or large non-stick frying pan over medium-high heat. Once the pan is hot, add the sweet potato mixture to it. Stir fry the potatoes for 12 to 15 minutes.
Step 5
Take the pan off the heat and let the potatoes cool down. Once cooled, crumble the
Feta Cheese (2/3 cup)
and add it together with half of the chopped
Fresh Parsley (1 handful)
to the bowl.
Step 6
Stir well again. Check the seasoning and add extra pepper or salt to taste if necessary. Then pour the potatoes and cheese in a large baking dish.
Step 7
Bake the potatoes in the preheated oven for 1 hour or until soft.
Step 8
Remove the dish from the oven and serve hot. Enjoy!
