Step 1
Dice the Fresh Strawberries (1 cup) into small pieces. Set aside.
Step 2
Add the Egg (1) , Oil (1/2 Tbsp) , and Milk (1 cup) into a blender.
Step 3
Next, add the All-Purpose Flour (1 cup) , Baking Powder (1 Tbsp) , Granulated Sugar (2 Tbsp) , and Salt (1/2 tsp) . Then blend the ingredients on low until batter is smooth.
Step 4
Spray a griddle or frying pan with cooking spray and add a small circle of pancake batter onto the hot pan.
Step 5
You can add strawberries to the batter if you like.
Step 6
Make sure to wait until the pancake's edges are dry and the top of the pancake has bubbles rising up before you flip the pancakes.
Step 7
For the homemade whipped cream, add the Heavy Cream (1 cup) , Vanilla Extract (1 tsp) , and Granulated Sugar (3 Tbsp) in a tightly closed mason jar and then shake for a couple of minutes until thick and creamy.
Step 8
Assemble your three-layer strawberry pancakes. Place the pancake on a plate, add whipped cream and then strawberries, and repeat until you have three layers of everything!
Step 9
Serve and enjoy!
