Dice the Fresh Strawberry (1 cup) into small pieces. Set aside.
Add the Egg (1), Oil (2 teaspoon), and Milk (1 cup) into a blender.
Next, add the All-Purpose Flour (1 cup), Baking Powder (1 tablespoon), Granulated Sugar (2 tablespoon), and Salt (1/2 teaspoon). Then blend the ingredients on low until batter is smooth.
Spray a griddle or frying pan with cooking spray and add a small circle of pancake batter onto the hot pan.
You can add strawberries to the batter if you like.
Make sure to wait until the pancake's edges are dry and the top of the pancake has bubbles rising up before you flip the pancakes.
For the homemade whipped cream, add the Vanilla Extract (1 teaspoon), Granulated Sugar (3 tablespoon), and Heavy Cream (1 cup) in a tightly closed mason jar and then shake for a couple of minutes until thick and creamy.
Assemble your three-layer strawberry pancakes. Place the pancake on a plate, add whipped cream and then strawberries, and repeat until you have three layers of everything!
