Preheat the oven to 400 degrees F (200 degrees C).
Toss Parsnip (8) with 2 tablespoons of olive oil, Salt (to taste), and Ground Black Pepper (to taste).
Place on two baking sheets, without overcrowding. Bake for 10 to 15 minutes.
After, flip the parsnips, rotate position in the oven, and bake for about 10 minutes more (or until parsnips are crispy outside, tender inside).
Blend Yogurt (3/4 cup), Parmesan Cheese (1/4 cup), Garlic (2 clove), Fresh Ginger (1 pinch), Honey (1/2 tablespoon), and Balsamic Vinegar (1 tablespoon) in a food processor.
Add Dried Thyme (1/2 teaspoon), Fresh Parsley (1/2 teaspoon), Fresh Basil (1/4 cup), Salt (to taste), Ground Black Pepper (to taste), and Olive Oil (1/4 cup) to the mixture. Adjust seasoning if needed.
Serve parsnip fries with creamy garlicky herb dip on the side.
