Gluten-Free Self-Rising Flour
Dark Chocolate Chips
Preheat the oven to 350 degrees F (180 degrees C).
Grease a 900 gram loaf tin with butter or butter spread. Cream the Buttery Spread (1/3 cup) until light and fluffy, then add the Eggs (2) and continue to whisk for a further minute or so.
Fold in the Bananas (3), Apple Juice (3 Tbsp), Gluten-Free Self-Rising Flour (1 2/3 cups), Almond Meal (1/2 cup), Baking Powder (1/2 tsp), Ground Cinnamon (1/2 tsp) and Dark Chocolate Chips (1/4 cup).
Place the mixture in your prepared loaf tin and bake in the preheated oven for one hour.
Allow the loaf or muffins to cool for ten minutes before turning out onto a wire rack and slicing.
