Preheat oven to 350 degrees F (180 degrees C).
Melt Butter (8 tablespoon) in a saucepan. Stir in Water (1/4 cup), Vanilla Extract (1 teaspoon), and Honey (4 tablespoon).
In a mixing bowl stir together Whole Wheat Flour (2 1/4 cup), Evaporated Cane Sugar (1/2 cup), Baking Powder (1 teaspoon), Baking Soda (1/2 teaspoon), Salt (1/2 teaspoon) and Ground Cinnamon (1/2 teaspoon). Add Unsweetened Cocoa Powder (1/3 cup) if you want chocolate crackers.
Add liquid ingredients to dry ingredients and stir until you form a ball.
Roll out to about 1/4 of an inch on parchment paper or lightly floured surface. Cut animal shapes with cookie cutters. Place on parchment lined cookie sheet. Bake for 10 - 12 minutes.
Turn off oven and leave crackers in oven 3-5 minutes longer if you like to crisp them up. If you like,you can make icing during this time. Mix Powdered Confectioners Sugar (1 cup), Vanilla Extract (1 teaspoon), Milk (2 1/2 tablespoon) until thick.
Ice the cookies or eat without.
