They are a healthy cookie for the little ones, but don't loose any part of "delicious" by their being healthy... it is hard to eat only a few. Be sure to try both the original graham flavor, and the chocolate, which I think is my favorite.

Preheat oven to 350 degrees F (180 degrees C).

Melt Butter (1/2 cup) in a saucepan. Stir in Water (1/4 cup), Vanilla Extract (1 tsp), and Honey (1/4 cup).

In a mixing bowl stir together Whole Wheat Flour (2 1/4 cups), Evaporated Cane Sugar (1/2 cup), Baking Powder (1 tsp), Baking Soda (1/2 tsp), Salt (1/2 tsp) and Ground Cinnamon (1/2 tsp). Add Unsweetened Cocoa Powder (1/3 cup) if you want chocolate crackers.

Add liquid ingredients to dry ingredients and stir until you form a ball.

Roll out to about 1/4 of an inch on parchment paper or lightly floured surface. Cut animal shapes with cookie cutters. Place on parchment lined cookie sheet. Bake for 10 - 12 minutes.

Turn off oven and leave crackers in oven 3-5 minutes longer if you like to crisp them up. If you like,you can make icing during this time. Mix Powdered Confectioners Sugar (1 cup), Vanilla Extract (1 tsp), Milk (2 1/2 Tbsp) until thick.
