Step 1
Add the
Old Fashioned Rolled Oats (1/2 cup)
and
Chia Seeds (1 tsp)
to your food processor and blend on high for 1 minute until finely ground.
Step 2
Break up the
Banana (1)
into a few pieces, and add to the food processor. Add
Purely Pinole® Original Power Breakfast (1 cup)
,
Baking Soda (1 tsp)
, warm
Water (1 cup)
, and
Salt (1/2 tsp)
.
Step 3
Blend everything together until very smooth. Let mixture stand for about 10 minutes to thicken.
Step 4
Heat
Coconut Oil (1 tsp)
in a skillet over a medium heat, and drop around 3 to 4 tablespoons of the mixture into the pan for each pancake.
Step 5
Cook until the pancakes fluff up, flipping on each side for around 5 minutes.
Step 6
Stack cooked pancakes on to a plate and top with
Greek Yogurt (1/2 cup)
and
Fresh Blueberries (1/2 cup)
. Drizzle with
Maple Syrup (to taste)
. Serve and enjoy!
