Add the Old Fashioned Rolled Oats (1/2 cup) and Chia Seeds (1 tsp) to your food processor and blend on high for 1 minute until finely ground.

Break up the Banana (1) into a few pieces, and add to the food processor. Add Purely Pinole® Original Power Breakfast (1 cup), Baking Soda (1 tsp), warm Water (1 cup), and Salt (as needed).

Blend everything together until very smooth. Let mixture stand for about 10 minutes to thicken.

Heat Coconut Oil (1 tsp) in a skillet over a medium heat, and drop around 3 to 4 tablespoons of the mixture into the pan for each pancake.

Cook until the pancakes fluff up, flipping on each side for around 5 minutes.

Stack cooked pancakes on to a plate and top with Greek Yogurt (1/2 cup) and Fresh Blueberry (1/2 cup). Drizzle with Maple Syrup (to taste). Serve and enjoy!
