Preheat your waffle iron. Mix the Almond Flour (1 cup), Coconut Flour (2 tablespoon), Baking Soda (1/2 teaspoon), Salt (1/2 teaspoon), Ground Cinnamon (1 teaspoon), and Ground Nutmeg (1/2 teaspoon) in a large bowl.
Add the Sweet Potato (1), Egg (2), Almond Milk (1/3 cup), Maple Syrup (2 tablespoon), Vanilla Extract (1 1/2 teaspoon), and Coconut Oil (1/2 tablespoon) to the bowl and whisk until well mixed.
Pour the batter into onto the waffle iron and cook according to the directions on your waffle iron.
Plate the waffles and garnish with desired toppings, such as berries, maple syrup or chocolate chips!
