Step 1
Preheat your waffle iron. Mix the Almond Flour (1 cup) , Coconut Flour (2 Tbsp) , Baking Soda (1/2 tsp) , Salt (1/2 tsp) , Ground Cinnamon (1 tsp) , and Ground Nutmeg (1/2 tsp) in a large bowl.
Step 2
Add the Sweet Potato (1) , Eggs (2) , Almond Milk (1/3 cup) , Maple Syrup (2 Tbsp) , Vanilla Extract (1/2 Tbsp) , and Coconut Oil (1/2 Tbsp) to the bowl and whisk until well mixed.
Step 3
Pour the batter into onto the waffle iron and cook according to the directions on your waffle iron.
Step 4
Plate the waffles and garnish with desired toppings, such as berries, maple syrup or chocolate chips!
