Step 1
In a large pot over medium-high heat mix the
Peaches (5)
, the juice from
Lemon (1)
, and
Granulated Sugar (1 cup)
. Simmer for 20 minutes.

Add in the
Fresh Ginger (2 Tbsp)
and
Ground Cinnamon (1/4 tsp)
and continue to simmer for another 10-15 minutes or until the jam thickens and does not run together when you run a spoon through it. Remove from heat and allow to cool.
Step 3
Preheat oven to 350 degrees F (175 degrees C).

Cream the
Butter (3/4 cup)
,
Brown Sugar (1/4 cup)
, and
Granulated Sugar (1/2 cup)
until pale and fluffy.
Step 5
Mix in the
All-Purpose Flour (1 cup)
,
Old Fashioned Rolled Oats (3/4 cup)
,
Salt (1/2 tsp)
, and
Ground Ginger (1/4 tsp)
until well combined.
Step 6
Set aside 1 cup dough. Press remaining dough into a greased and parchement-lined 13x9-inch pan to form a crust. Bake 10 minutes.
Step 7
Once cooked allow to cool slightly, then spread the jam evenly over the crust. Crumble reserved dough over the top.
Step 8
Bake for 20-30 minutes or until the top begins to turn brown.
Step 9
Cool completely before slicing. Serve and Enjoy your Peach and Ginger Jam Bars!
