In a large pot over medium-high heat mix the Peach (5), Lemon Juice (2 teaspoon), and Granulated Sugar (1 cup). Simmer for 20 minutes.
Add in the Fresh Ginger (2 tablespoon) and Ground Cinnamon (1/4 teaspoon) and continue to simmer for another 10-15 minutes or until the jam thickens and does not run together when you run a spoon through it. Remove from heat and allow to cool.
Preheat oven to 350 degrees F (175 degrees C).
Cream the Butter (3/4 cup), Brown Sugar (1/4 cup), and Granulated Sugar (1/2 cup) until pale and fluffy.
Mix in the All-Purpose Flour (1 cup), Old Fashioned Rolled Oats (3/4 cup), Salt (1/2 teaspoon), and Ground Ginger (1/4 teaspoon) until well combined.
Set aside 1 cup dough. Press remaining dough into a greased and parchement-lined 13x9-inch pan to form a crust. Bake 10 minutes.
Once cooked allow to cool slightly, then spread the jam evenly over the crust. Crumble reserved dough over the top.
Bake for 20-30 minutes or until the top begins to turn brown.
Cool completely before slicing and serving.
