Step 1
Preheat oven to 350 degrees F (180 degrees C). Line a baking sheet with parchment paper or foil.
Step 2
Place
Baby Bell Peppers (3 cups)
on a cutting board. Slice off one side of each pepper horizontally to make a pepper boat. Discard the seeds.
Step 3
Stuff each pepper with
Sausages (1 cup)
and place them on the baking sheet in a single layer.
Step 4
Sprinkle with
Shredded Mexican Cheese Blend (1/2 cup)
on top.
Step 5
Bake for 10-12 minutes or until cheese melts.
Step 6
To serve, grab one mini stuffed pepper and dip it into
Guacamole (to taste)
or salsa, or both! Enjoy!
