Step 1
Place the
Fresh Baby Spinach (1 bunch)
into a large microwave-proof casserole dish and cover with a glass top or plastic wrap to lock in the steam. Cook in the microwave for 2 minutes.
Step 2
Add the
Unsalted Butter (2 Tbsp)
and
Ground Nutmeg (1/4 tsp)
, and season to taste with
Salt (to taste)
and
Ground Black Pepper (to taste)
. Set aside.
Step 3
Place the
Salmon (1 lb)
skin-side down into another microwave-proof casserole dish. Season with
Garlic Powder (1 tsp)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
.
Step 4
Brush each fillet with 2 Tbsp of the
Basil Pesto (1/4 cup)
. Cover the dish tightly with a glass top or plastic wrap to lock in the steam. Cook on Power 7 for 5 minutes.
Step 5
Check the center of the fish for doneness – it should flake apart easily when poked with a fork. If undercooked, continue to cook at 30-second intervals. Do not overcook fish. Let stand, covered, for 3 minutes before serving.
Step 6
Squeeze
Lemons (to taste)
over fish and garnish with
Fresh Basil (to taste)
if desired. Serve with spinach.
