Place the Fresh Baby Spinach (1 bunch) into a large microwave-proof casserole dish and cover with a glass top or plastic wrap to lock in the steam. Cook in the microwave for 2 minutes.
Add the Unsalted Butter (2 tablespoon) and Ground Nutmeg (1/4 teaspoon), and season to taste with Salt and Pepper (to taste) Set aside.
Place the Salmon (1 pound) skin-side down into another microwave-proof casserole dish. Season with Garlic Powder (1 teaspoon),Salt and Pepper (to taste).
Brush each fillet with 2 Tbsp of the Basil Pesto (1/4 cup). Cover the dish tightly with a glass top or plastic wrap to lock in the steam. Cook on Power 7 for 5 minutes.
Check the center of the fish for doneness – it should flake apart easily when poked with a fork. If undercooked, continue to cook at 30-second intervals. Do not overcook fish. Let stand, covered, for 3 minutes before serving.
Squeeze Lemon (to taste) over fish and garnish with Fresh Basil (to taste) if desired. Serve with spinach.
