Chicken Broth
or tomato juice or tomato puree
1 lb
Ground Lean Pork
or Beef, Chicken, Turkey
1 can

Diced Tomatoes , drained
you can use garlic or onion flavor canned if you like
1 cup
Chopped  White Onions
2 cups
Finely Chopped  Cauliflower
add as much or little as you’d like
1 tsp
Minced  Garlic

or 1/2 cup to 2/3 cup hot chipotle salsa
1 tsp
Ground Cumin
1/2 tsp
1/4 tsp
Chili Powder
1/2 tsp will create more spice

Chopped  Bell Peppers

Cooking Instructions

Step 1
Place the Sweet Potatoes (2) in a microwave-safe bowl and steam in the Panasonic Microwave Oven with 1 tablespoon water in them for 2-3 minutes or until tender.
Step 2
Brown Ground Lean Pork (1 lb) in a skillet, drain the grease. Then place in the crock pot.
Step 3
Add your Diced Tomatoes (1 can) , sweet potatoes, White Onions (1 cup) , Cauliflower (2 cups) , Chicken Broth (2 cups) , and mix all together.
Step 4
Finally, add your Garlic (1 tsp) , Chipotle Peppers in Adobo Sauce (2) , Ground Cumin (1 tsp) , Paprika (1/2 tsp) , Chili Powder (1/4 tsp) , and Ground Black Pepper (1/4 tsp) . Add Bell Peppers (1/2 cup) here if you are using it.
Step 5
Stir and cook on high for 3-4 hrs. If you browned your meat prior then cooking time will be less. Around 1-2 hrs high, checking at 1 hour or so.
Step 6
Add more paprika, black pepper, or Sea Salt (to taste) when finished cooking, if desired.
Step 7
Garnish with Fresh Cilantro (to taste) and Jalapeño Peppers (to taste) . Top with cheese, tortilla chips, or your favorite toppings. Cooking results may vary depending on microwave oven used.
