Crock Pot Paleo Sweet Potato Chipotle Chili

This chipotle chili recipe is healthy but hearty, and has a kick of spice! Made with simple ingredients you probably already have in your fridge!

15 Ingredients

2 Sweet Potato

2 Chicken Broth

1 lb Ground Lean Pork

1 Tbsp Olive Oil

14 oz Canned Diced Tomatoes

1 cup White Onion

2 cup Cauliflower

1 clove Garlic

2 Chipotle Peppers in Adobo Sauce

1/4 Tbsp Ground Cumin

1/2 Tbsp Paprika

1/4 Tbsp Ground Black Pepper

to taste Sea Salt

1/2 Shallot

to taste Fresh Herbs

Steps 1

First, chop and peel your Sweet Potato into chunky dice.

Steps 2

Cut the white onion into medium dice.

Steps 3

Remove the stalk and roughly chop the cauliflower florets into medium dice.

Steps 4

Next add your Ground Lean Pork to the crock pot with Chicken Broth and Olive Oil.

Steps 5

Add your Canned Diced Tomatoes, sweet potato, White Onion, Cauliflower and mix all together.

Finally, add your Garlic, Ground Cumin, Paprika, Ground Black Pepper, Sea Salt and Chipotle Peppers in Adobo Sauce with sauce.

Stir and cook on high for 3-4 hrs.

Steps 8

Add your Shallot the last hour of cooking if you adding them.

Steps 9

Add more paprika and or black pepper or sea salt when finished cooking if desired.

Steps 10

Garnish with fresh Fresh Herbs such as cilantro or basil works well too. Serve and enjoy!
