Directions

HIDE IMAGES
Step 1
Place the Sweet Potato (2) in a microwave-safe bowl and steam in the Panasonic Microwave Oven with 1 tablespoon water in them for 2-3 minutes or until tender.
Step 2
Brown Ground Lean Pork (1 pound) in a skillet, drain the grease. Then place in the crock pot.
Step 3
Add your Diced Tomatoes (1 can), sweet potatoes, White Onion (1 cup), Cauliflower (2 cup), Chicken Broth (2 cup), and mix all together.
Step 4
Finally, add your Garlic (1 teaspoon), Chipotle Peppers in Adobo Sauce (2), Ground Cumin (1 teaspoon), Paprika (1/2 teaspoon), Chili Powder (1/4 teaspoon), and Ground Black Pepper (1/4 teaspoon). Add Bell Pepper (1/2 cup) here if you are using it.
Step 5
Stir and cook on high for 3-4 hrs. If you browned your meat prior then cooking time will be less. Around 1-2 hrs high, checking at 1 hour or so.
Step 6
Add more paprika, black pepper, or Sea Salt (to taste) when finished cooking, if desired.
Step 7
Garnish with Fresh Cilantro (to taste) and Jalapeño Pepper (to taste). Top with cheese, tortilla chips, or your favorite toppings. Cooking results may vary depending on microwave oven used.
