Place the Sweet Potatoes (2) in a microwave-safe bowl and steam in a microwave oven with 1 tablespoon water in them for 2-3 minutes or until tender.

Brown 95/5 Lean Ground Pork (1 lb) in a skillet, drain the grease. Then place in the crock pot.

Add your Diced Tomatoes (1 can), sweet potatoes, White Onion (1 cup), Cauliflower (2 cups), Chicken Broth (2 cups), and mix all together.

Finally, add your Garlic (1 tsp), Chipotle Peppers in Adobo Sauce (2), Ground Cumin (1 tsp), Paprika (as needed), Chili Powder (as needed), and Ground Black Pepper (as needed). Add Bell Pepper (1/2 cup) here if you are using it.

Stir and cook on high for 3-4 hrs. If you browned your meat prior then cooking time will be less. Around 1-2 hrs high, checking at 1 hour or so.

Add more paprika, black pepper, or Sea Salt (to taste) when finished cooking, if desired.

Garnish with Fresh Cilantro (to taste) and Jalapeño Peppers (to taste). Top with cheese, tortilla chips, or your favorite toppings.
