I'm always on the look out for a good sandwich since I bring lunch to work a couple of times a week. That's where this smashed chickpea avocado sandwich comes in. I made an avocado feta dip a little while ago and I kept thinking it would make a good sandwich spread.

GOYA® Chick Peas
, rinsed, drained

clove
Garlic
, grated
•

Lemon
, juiced
•
to taste
Feta Cheese

Salt

Ground Black Pepper
Cooking Instructions
1.
Rinse and drain the GOYA® Chick Peas (2 cups) and pat dry on a paper towel. Juice the Lemon (1) and grate the Garlic (1 clove).
2.
Place chickpeas, Avocado (1), grated garlic, lemon juice, Salt (to taste), Ground Black Pepper (to taste) and Feta Cheese (to taste) in your food processor and blend until spreadable.
3.
Spread mixture onto bread and top with your favorite toppings.
4.
Enjoy!
