In a skillet heat up Extra-Virgin Olive Oil (2 tablespoon) and Garlic (1 clove). Saute on low heat until garlic gets a nice golden color.
Wash and cut in half the Grape Tomatoes (8).
Add tomatoes to skillet. Season with Salt and Pepper (to taste). Cook on medium-high for 5 minutes.
Add Salmon Fillet (100 gram), cook on medium for 2-3 minutes.
Add the Heavy Cream (150 milliliter), adjust with salt and pepper and let simmer on low for 2-3 min. Add the Fresh Parsley (1 tablespoon).
Meanwhile, cook the Rotini Pasta (100 gram) based on packaging instructions.
Add it to the skillet and saute it with the sauce on low-medium heat for 1-2 minutes.
Transfer to a plate and garnish with parsley.
