Cooking Instructions

Step 1
Heat the Olive Oil (to taste) in pan and add Yellow Onion (1) . Cook for 3 minutes. Add the Garlic (2 cloves) , and stir for another minute.
Step 2
Take the Firm Tofu (14 oz) and squeeze it through your hands so it crumbles into the pan. Add Fresh Oregano (to taste) , Fresh Basil (to taste) , and a pinch of Salt and Pepper (to taste) . Cook and occasionally stir for about 3-5 minutes.
Step 3
Add the Sun-Dried Tomatoes (3 Tbsp) and crumbled Vegetarian Sausage (1) and stir for a minute.
Step 4
Add the Capers (1 Tbsp) and Marinated Artichokes (4) and stir for a minute.
Step 5
Add the White Beans (1/4 can) , Chickpeas (1/4 can) , any additional herbs, and Salt and Pepper (to taste) . Stir for a minute.
Step 6
Add the Arugula (to taste) and stir in. Let scramble cook, occasionally stirring for 2-3 minutes.
Step 7
Serve and enjoy!
