Peanut Butter and Jelly Bars

And these peanut butter and jelly bars…well they turned my kitchen failure into a success. While I wanted jelly for toast…I ended up with a perfect filling for a dessert.

Ingredients

1 teaspoon Baking Powder
1/2 teaspoon Salt
1 1/2 cup Creamy Natural Peanut Butter
3/4 cup Granulated Sugar
3/4 cup Brown Sugar
1 1/2 cup room temperature Grape Jelly
1/2 cup roasted Salted Peanuts

STEP 1
Preheat oven to 350 degrees F and grease a 9 x 13 inch pan or line with parchment paper.
STEP 2
Allow the Grape Jelly (1 1/2 cup) and Unsalted Butter (1 cup) to come to room temperature, and chop the Salted Peanuts (1/2 cup).
STEP 3
In a large mixing bowl, combine the dry ingredients: All-Purpose Flour (3 cup), Baking Powder (1 teaspoon), and Salt (1/2 teaspoon). Whisk to combine.
STEP 4
In another bowl, cream together butter and Creamy Natural Peanut Butter (1 1/2 cup). Add Granulated Sugar (3/4 cup) and Brown Sugar (3/4 cup) and continue to cream until well combined.
STEP 5
Beat in Egg (2) , one at a time. Add Vanilla Extract (1 teaspoon). Then, with the mixer on low, add the dry ingredients and mix until well combined.
STEP 6
Press ½ to ⅔ of the mixture into the prepared pan. Evenly spread grape jelly over crust.
STEP 7
Scatter remaining crust over top of jelly and top with chopped peanuts. Place in preheated oven and bake for 30 to 35 minutes until top is golden brown.
STEP 8
Remove from oven and let cool before slicing. Serve and enjoy!
