Preheat oven to 350 degrees F (180 degrees C).
Bake Sweet Potato (3 pound) for one hour or more until soft and tender. Once cool remove skins.
Add potatoes to food processor with Dark Brown Sugar (1/4 cup), Unsalted Butter (4 tablespoon), Bourbon (1/8 cup), Salt (1/2 teaspoon), Fresh Ginger (1/2 teaspoon), Ground Allspice (1/8 teaspoon), Ground Nutmeg (1/8 teaspoon), Ground Cinnamon (1/2 teaspoon), Freshly Ground Black Pepper (1/8 teaspoon), Orange Juice (3 tablespoon), Vanilla Extract (1 teaspoon), Orange (1/2 teaspoon), Large Egg (2) and Pineapple (4 ounce).
Puree the mixture until completely smooth. Transfer mixture to a buttered baking dish. Bake sweet potato mixture for 30 minutes at 350 degrees F (180 degrees C).
Then add Marshmallow (1 package) just enough to cover the top of the potatoes and bake/broil until then are nice and browned about 1-2 minutes.
