Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Bake
Sweet Potatoes (9 cups)
for one hour or more until soft and tender. Once cool remove skins.
Step 3
Add potatoes to food processor with
Dark Brown Sugar (1/4 cup)
,
Unsalted Butter (1/4 cup)
,
Bourbon (2 Tbsp)
,
Salt (1/2 tsp)
,
Fresh Ginger (1/2 tsp)
,
Ground Allspice (1/8 tsp)
,
Ground Nutmeg (1/8 tsp)
,
Ground Cinnamon (1/2 tsp)
,
Freshly Ground Black Pepper (1/8 tsp)
, zest and juice from
Orange (1)
,
Vanilla Extract (1 tsp)
,
Large Eggs (2)
and
Pineapples (2/3 cup)
.
Step 4
Puree the mixture until completely smooth. Transfer mixture to a buttered baking dish. Bake sweet potato mixture for 30 minutes at 350 degrees F (180 degrees C).
Step 5
Then add
Marshmallows (1 pckg)
just enough to cover the top of the potatoes and bake/broil until then are nice and browned about 1-2 minutes.
