Preheat the oven to 400 degrees F (205 degrees C).
Toss Sweet Potato (2) in a large bowl with Olive Oil (1 1/2 tablespoon).
Transfer to a large parchment paper lined baking sheet and sprinkle with Smoked Paprika (1/4 teaspoon), Salt and Pepper (to taste). Roast sweet potatoes for 20-25 minutes.
While the sweet potatoes cook, prepare the avocado crema: blend together the Avocado (2), Unsweetened Coconut Yogurt (1/4 cup), juice from the Lime (1), Garlic Powder (1/4 teaspoon), Salt and Pepper (to taste). Set aside.
When potatoes are cooked through, top with Black Beans (1 can), Tomato (1/2 cup), Red Onion (1/4 cup), Bell Pepper (1/2 cup), Fresh Cilantro (1/4 cup), and Jalapeño Pepper (1). Drizzle with avocado crema. Enjoy!
