Step 1
Preheat the oven to 400 degrees F (205 degrees C).
Step 2
Toss Sweet Potatoes (2) in a large bowl with Olive Oil (1 1/2 Tbsp) .
Step 3
Transfer to a large parchment paper lined baking sheet and sprinkle with Smoked Paprika (1/4 tsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Roast sweet potatoes for 20-25 minutes.
Step 4
While the sweet potatoes cook, prepare the avocado crema: blend together the Avocados (2) , Unsweetened Coconut Yogurt (1/4 cup) , juice from the Lime (1) , Garlic Powder (1/4 tsp) , Salt (to taste) and Ground Black Pepper (to taste) . Set aside.
Step 5
When potatoes are cooked through, top with Black Beans (1 can) , Tomatoes (1/2 cup) , Red Onions (1/4 cup) , Bell Peppers (1/2 cup) , Fresh Cilantro (1/4 cup) , and Jalapeño Pepper (1) . Drizzle with avocado crema. Enjoy!
