No skewers? No problem! Just proceed without them and make sure to cook the chicken fully on all sides.

step 1
Deseed Red Chili Peppers (2) and finely dice. Grate Garlic (3 cloves) and Fresh Ginger (1 piece). Add all into a small bowl.

In the same bowl, add Brown Sugar (2 Tbsp), juice of the Limes (2), and Soy Sauce (1/3 cup). Mix until well combined.

Slice Chicken Thighs (2 lb) into 2-inch cubes and thread 4-6 pieces of chicken onto skewers. Add to marinade and set aside for 20 minutes.

Finely chop Fresh Mint (1/2 cup). Add to Plain Greek Yogurt (1/2 cup) and season with Salt (to taste), and Ground Black Pepper (to taste). Set aside in the fridge until ready to serve.

Finely dice the Cucumbers (2) and cut Lime (1) into quarters.

Warm Pita Bread (8) in a dry pan for 2 minutes.

Grill chicken skewers for 5-8 minutes, turning once halfway.

Serve chicken skewers with warm pita, yogurt dressing, cucumber, lime, and chopped mint.
