Add Brown Sugar (2 Tbsp), Curry Powder (1/2 Tbsp), Distilled White Vinegar (2 Tbsp) and Extra-Virgin Olive Oil (1/3 cup) in one little bowl. Season with a little Salt (to taste) and Ground Black Pepper (to taste). Give that a good mix around.

Add in Sultanas (1/2 cup). Cover with some plastic wrap and allow this to stand for about an hour. It will allow those sultanas to soak up those flavors.

Get the cookedWhite Rice (1 1/3 cups) in a big bowl. Add in Celery (1 stalk) and Scallion (1 bunch), In order to add a bit color and some sweetness, chop up Red Apple (1) and dust that up. Toss them together.
