Add Brown Sugar (2 tablespoon), Curry Powder (2 teaspoon), Distilled White Vinegar (2 tablespoon) and Extra-Virgin Olive Oil (1/3 cup) in one little bowl. Season with a little Salt and Pepper (to taste). Give that a good mix around.
Add in Sultanas (1/2 cup). Cover with some plastic wrap and allow this to stand for about an hour. It will allow those sultanas to soak up those flavors.
Get White Rice (4 cup) in a big bowl. Add in Celery (1 stalk) and Scallion (4). In order to add a bit color and some sweetness, chop up Red Apple (1) and dust that up. Toss them together.
Pour over our salad dressing and sultanas. Toss everything together until it is nicely combined.
