In an oven-safe skillet over medium-high heat add the
Chorizo (6 oz)
. Stir and cook for about 5 minutes, until it’s crumbled, browned, and cooked through.
In the meantime, set the broiler to high.
Once the chorizo is done, transfer to a paper-towel-lined plate to drain. Drain any leftover fat from the skillet.
In the same skillet, melt the
Unsalted Butter (1 Tbsp)
over medium heat. Whisk in the
All-Purpose Flour (1 Tbsp)
and cook for 1 minute.
Whisk in the
Whole Milk (1 cup)
and cook until slightly thickened. Less than a minute.
Remove from the heat and stir in the
Monterey Jack Cheese (2 1/2 cups)
Sprinkle chorizo over top, then the rest of the
Monterey Jack Cheese (1/2 cup)
Put the pan under the broiler and broil until the cheese is golden brown on top. Watch carefully. Should be about 5 minutes.
Remove from the oven, top with some
Fresh Cilantro (2 Tbsp)
. Serve with
Tortilla Chips (1 bag)
