In an oven-safe skillet over medium-high heat add the Chorizo (6 ounce). Stir and cook for about 5 minutes, until it’s crumbled, browned, and cooked through.
In the meantime, set the broiler to high.
Once the chorizo is done, transfer to a paper-towel-lined plate to drain. Drain any leftover fat from the skillet.
In the same skillet, melt the Unsalted Butter (1 tablespoon) over medium heat. Whisk in the All-Purpose Flour (1 tablespoon) and cook for 1 minute.
Whisk in the Whole Milk (1 cup) and cook until slightly thickened. Less than a minute.
Remove from the heat and stir in the Monterey Jack Cheese (2 1/2 cup).
Sprinkle chorizo over top, then the rest of the Monterey Jack Cheese (1/2 cup).
Put the pan under the broiler and broil until the cheese is golden brown on top. Watch carefully. Should be about 5 minutes.
Remove from the oven, top with some Fresh Cilantro (2 tablespoon). Serve with Tortilla Chips (1 bag).
