Author's Notes

Make sure to give yourself time to soak the cashews for at least 4 hours - up to overnight before starting the recipe.

For best results, refrigerate the cream cheese for 6 hours once blended to set and help flavors meld.

Preheat oven to 325 degrees F (165 degrees C).

Place Firm Tofu (7 oz) on a cutting board lined with a kitchen cloth, place a plate onto the tofu and then a heavy book onto the plate. Less this press for 30 minutes to drain the liquid.

Into a large bowl combine your Everything Bagels (3) pieces, Olive Oil (3 Tbsp), Everything Bagel Seasoning (2 Tbsp), and Dried Thyme (2 Tbsp). Toss till well coated.

Transfer between two baking sheets and cook for 15 minutes, flipping halfway through. Use your own judgement, this may take longer than 15 minutes depending on your oven.

Once cooked, remove from oven and set on a baking tray to cool.

Once 30 minutes have passed transfer your tofu, Raw Cashews (1 cup), Coconut Oil (2 Tbsp), Olive Oil (2 Tbsp), {@10:}, Freshly Ground Black Pepper (as needed), juice from Lemon (1), Apple Cider Vinegar (3 Tbsp), Dried Dill Weed (1 Tbsp), Dried Oregano (1 Tbsp), Fresh Thyme (1 handful), ad Fresh Chives (1 handful) into a high-speed blender and blend till well combined. Could take up to 1-2 minutes.

Transfer to a tightly sealed container, pat till flat, and chill in the fridge for up to 6 hours or overnight before serving.
