Everything Bagels
sliced in half then into bite-size pieces
3 Tbsp
2 Tbsp
Everything Bagel Seasoning
2 Tbsp
Dried Thyme

Vegan Garlic Herb Cream Cheese

7 oz
Firm Tofu
1 cup
Raw Cashews
soaked for 4 hours, up to overnight
2 Tbsp
Coconut Oil
2 Tbsp
1 tsp
1/2 tsp
Freshly Ground Black Pepper
1 Tbsp
1 handful
Fresh Thyme , finely chopped
1 handful
Fresh Chives , finely chopped
or Fresh Green Onion

Author's Notes

Make sure to give yourself time to soak the cashews for at least 4 hours - up to overnight before starting the recipe. For best results, refrigerate the cream cheese for 6 hours once blended to set and help flavors meld.

Cooking Instructions

Step 1
Preheat oven to 325 degrees F (165 degrees C).
Step 2
Place Firm Tofu (200 gram) on a cutting board lined with a kitchen cloth, place a plate onto the tofu and then a heavy book onto the plate. Less this press for 30 minutes to drain the liquid.
Step 3
Into a large bowl combine your Dried Thyme (2 tablespoon) pieces, Everything Bagel (3), Everything Bagel Seasoning (2 tablespoon), and Olive Oil (3 tablespoon). Toss till well coated.
Step 4
Transfer between two baking sheets and cook for 15 minutes, flipping halfway through. Use your own judgement, this may take longer than 15 minutes depending on your oven.
Step 5
Once cooked, remove from oven and set on a baking tray to cool.
Step 6
Once 30 minutes have passed transfer your tofu, Raw Cashews (1 cup), Coconut Oil (2 tablespoon), Olive Oil (2 tablespoon), Salt (1 teaspoon), Freshly Ground Black Pepper (1/2 teaspoon), Lemon Juice (1 tablespoon), Apple Cider Vinegar (3 tablespoon), Dried Dill Weed (1 tablespoon), Dried Oregano (1 tablespoon), Fresh Thyme (1 handful), ad Fresh Chives (1 handful) into a high-speed blender and blend till well combined. Could take up to 1-2 minutes.
Step 7
Transfer to a tightly sealed container, pat till flat, and chill in the fridge for up to 6 hours or overnight before serving.
Step 8
Enjoy with veggies and bagel bites on a fabulous platter!
