If I could I’d own a huge farm with large greenhouses so all fruits and vegetables would always be in season. Until then, I’ll eat seasonally. Homemade versions of processed foods are always better.

Cooking Instructions

Step 1
Heat Olive Oil (1 Tbsp) and sauté the Onions (1/4 cup) in a pan over medium heat until translucent, about 5 minutes.
Step 2
Add Sweet Potato (1) and cook for 2-3 minutes.
Step 3
Preheat your broiler to high. Add the Cayenne Pepper (to taste) , Garlic Powder (1/2 tsp) , Ground Thyme (1/8 tsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Cook for 7-8 minutes.
Step 4
Fry the Eggs (4) to your liking. Season with Salt (to taste) and Ground Black Pepper (to taste) .
Step 5
While the egg are cooking, Place the hash under the broiler for about 5 minutes until potatoes start to brown and are crispy. Spoon onto plates and top with fried eggs. Sprinkle with Fresh Basil (2 Tbsp) .
