Preheat your oven to 350 degrees F (180 degrees C).
In the bowl of your electric mixer whisk up Egg (2) and Granulated Sugar (80 gram) until light and fluffy.
Add in the Lemon Marmalade (150 gram), Ghee (50 milliliter), and Water (100 gram), slowly whisk those in. Next, add in the Cake Flour (150 gram), Type 2 Flour (50 gram), Salt (1 pinch), and Baking Powder (10 gram) gently folding them into the batter with a spatula.
Last fold in the Pear (200 gram).
Grease and dust with flour a cake pan of 25-cm diameter. Pour batter into the cake pan. Bake in a preheated oven at 350 degrees F (180 degrees C) for 40 minutes or until a tooth stick inserted in the centre comes out clean.
Let the cake cool down completely, then gently remove it from the pan and place it on a plate.
Warm up the Lemon Marmalade (50 gram) with a few tablespoons of water, and brush it on top of the cake
Slice it up and enjoy!
