Dairy-Free Pear and Lemon Cake

Cooking Instructions

Preheat your oven to 350 degrees F (180 degrees C).

In the bowl of your electric mixer whisk up Eggs (2) and Granulated Sugar (1/3 cup) until light and fluffy.

Add in the Lemon Marmalade (1/2 cup) , Ghee (11 tsp) , and Water (1/3 cup) , slowly whisk those in. Next, add in the Cake Flour (1 cup) , Type 2 Flour (1/3 cup) , Salt (1 pinch) , and Baking Powder (0.5 oz) gently folding them into the batter with a spatula.

Last fold in the Pears (1 1/3 cups) .

Grease and dust with flour a cake pan of 25-cm diameter. Pour batter into the cake pan. Bake in a preheated oven at 350 degrees F (180 degrees C) for 40 minutes or until a tooth stick inserted in the centre comes out clean.

Let the cake cool down completely, then gently remove it from the pan and place it on a plate.

Warm up the Lemon Marmalade (8 tsp) with a few tablespoons of water, and brush it on top of the cake

Slice it up and enjoy!
