Step 1
Saute
White Sesame Seeds (1/3 cup)
until golden.
Step 2
Season
Pork Ribs (1 slab)
with
Kosher Salt (to taste)
on both sides.
Step 3
Mix
Soy Sauce (1 cup)
,
Peanut Butter (2 Tbsp)
,
Honey (3 Tbsp)
,
Lee Kum Kee Hoisin Sauce (3 Tbsp)
,
Plum Sauce (2 Tbsp)
,
Fermented Bean Curd (1 Tbsp)
,
Sambal (1 Tbsp)
,
Sesame Oil (1 Tbsp)
,
Garlic Paste (1 Tbsp)
, and
Fresh Ginger (1 tsp)
.
Step 4
Put ribs a in a braising pan, add
Water (4 cups)
, pour marinade over the ribs.
Step 5
Cover braising pan air tight, bake at 375 degrees F (190 degrees C) until ribs are very tender but NOT falling apart, 2-3 hours, depending on the ribs.
Step 6
When the ribs are tender, remove the cover, raise the temperature to 400 degrees F (200 degrees C) and cook the ribs until nicely caramelized, about 15-20 minutes.
Step 7
Cut the slab into individual ribs.
Step 8
Sprinkle with the toasted sesame seeds and serve with
Pickled Sweet & Spicy Chili Peppers (to taste)
