Combine

in a small bowl. Whisk until incorporated, then set aside.
Step 2
Combine your
Arugula (1 cup)
,
Peach (1)
,
Heirloom Cherry Tomatoes (1 cup)
,
Red Onions (2 Tbsp)
, and
Fresh Mint (1 Tbsp)
in a bowl and pour half of your dressing mixture over. Mix lightly.
Step 3
Plate your arugula mixture and pour
Farro (1/2 cup)
over. Top with your
Burrata Cheese (1/2)
and the last half of your dressing.
