Step 1
Combine Olive Oil (1 tablespoon), Balsamic Vinegar (1 tablespoon), Salt (to taste), and Ground Black Pepper (to taste) in a small bowl. Whisk until incorporated, then set aside.
Step 2
Combine your Fresh Mint (1 tablespoon), Red Onion (1/8 cup), Heirloom Cherry Tomato (1 cup), Peach (1), and Arugula (1 cup) in a bowl and pour half of your dressing mixture over. Mix lightly.
Step 3
Plate your arugula mixture and pour Farro (1/2 cup) over. Top with your Burrata Cheese (1/2) and the last half of your dressing.
