Add the Lime (1), Agave Syrup (0.5 ounce), and 2 slices of Jalapeño Pepper (1) into a cocktail shaker or mason jar.
Muddle the jalapeños gently.
Add ice, the Carrot Juice (2 ounce), and White Mezcal (2 ounce). Shake for 15 seconds.
Strain into a glass with ice.
Garnish with leftover jalapeño slices and Baby Carrots (to taste).
