1/2 head Cauliflower

1 1/2 Tbsp Olive Oil

1 clove Garlic

1 cup Frozen Green Peas

1 cup Grape Tomatoes

1/2 tsp Lemon

1/2 cup Parmigiano-Reggiano

to taste Salt and Pepper

Steps 1

Cut the Cauliflower into small florets and add them to the work bowl of a food processor. Pulse until the cauliflower is chopped into fine granules resembling couscous.

Steps 2

Transfer the cauliflower to a bowl. Add the Olive Oil, Garlic and Frozen Green Peas. Toss to coat and cover tightly with plastic wrap. Microwave for 3 minutes on high power.

Steps 3

Add the sliced Grape Tomatoes, Lemon and Parmigiano-Reggiano and toss until well combined. Check for seasoning, adding Salt and Pepper if needed.

Steps 4

Serve with additional grated Parmigiano Reggiano if desired. Enjoy!
