Cut the Cauliflower (1/2 head) into small florets and add them to the work bowl of a food processor. Pulse until the cauliflower is chopped into fine granules resembling couscous.
Transfer the cauliflower to a bowl. Add the Olive Oil (1 1/2 tablespoon), Garlic (1 clove) and Frozen Green Peas (1 cup). Toss to coat and cover tightly with plastic wrap. Microwave for 3 minutes on high power.
Add the sliced Grape Tomatoes (1 cup), Lemon (1/2 teaspoon) and Parmigiano-Reggiano (1/2 cup) and toss until well combined. Check for seasoning, adding Salt and Pepper (to taste) if needed.
Serve with additional grated Parmigiano Reggiano if desired. Enjoy!
