Preheat the broiler to high and line a sheet pan with foil.
Mix up the Low-Sodium Soy Sauce (1/4 cup), Chili Garlic Sauce (1 tablespoon), Honey (3 tablespoon), and 3 Tbsp of juice from the Lime (2) in a small bowl.
Add Red Bell Pepper (2) and Pineapple (2 cup) to the prepared sheet pan. Drizzle with Olive Oil (2 tablespoon), Salt (to taste), and Ground Black Pepper (to taste). Toss to coat and spread into an even layer.
Broil peppers and pineapple for 5 minutes until they start to soften – they’ll be put back under the broiler again.
Remove sheet pan from oven, add the Shrimp (1 pound), and drizzle over about half of the sauce. Gently toss to combine.
Broil again for 2-3 minutes until shrimp are cooked – just turning pink and opaque. Watch carefully so you do not overcook the shrimp or burn anything. The broiler cooks food quickly!
Serve with White Rice (to taste) and drizzle over some extra sauce.
