Make sure to buy thick yogurt! If there is liquid on top, make sure not to use that, just scoop deep from the bottom of the tub. Depending on the flour you use (gluten-free or all-purpose flour) things may be slightly different. Gluten-free is, as always, fussier and requires more flour, 2 ½ Cups, and more time. They must cool completely before slicing and serving.

Feel free to top your bagels with whatever toppings you like, my favorite bagels are Everything But the Bagel Seasoning, Sesame Seeds, Cheddar and Jalapeno, Sea Salt, and Rosemary, and Cinnamon Sugar.

Preheat oven to 375 degrees F (190 degrees F).

In a mixing bowl combine the dry ingredients: All-Purpose Flour (2 1/4 cups), Baking Powder (1 Tbsp), and Kosher Salt (1/2 Tbsp).

Into the dry mixture, combine Greek Yogurt (1 1/2 cups) and Eggs (2). Mix slowly until sticky dough forms.

Flour the clean surface. Transfer the dough to the surface and flour the top of the dough. Divide the dough into six equal sections.

Roll each section in flour and knead about 10-15 times until no longer sticky.

Flour your thumb and poke a hole in the center and slowly push it out to be 4 to 5-inch diameter. Make sure the hole is a little larger than you want them to bake as they do expand in the oven. Place shaped dough on a parchment-lined baking sheet and make sure to leave the space between each dough.

Beat the remaining Egg (1) and brush on the bagel.

Sprinkle toppings of choice.

Bake for 25-30 minutes until golden brown.

Allow bagels to cool on the tray for 10 minutes before transferring to a wire rack to cool for another 10 minutes.

Slice and serve! To store: Once cooled place in an airtight container and freeze for up to 3 months.
