Preheat oven to 375 degrees F (190 degrees F).
In a mixing bowl combine the dry ingredients: All-Purpose Flour (2 1/4 cup), Baking Powder (1 tablespoon), and Kosher Salt (1 1/2 teaspoon).
Into the dry mixture, combine Greek Yogurt (1 1/2 cup) and Egg (2). Mix slowly until sticky dough forms.
Flour the clean surface. Transfer the dough to the surface and flour the top of the dough. Divide the dough into six equal sections.
Roll each section in flour and knead about 10-15 times until no longer sticky.
Flour your thumb and poke a hole in the center and slowly push it out to be 4 to 5-inch diameter. Make sure the hole is a little larger than you want them to bake as they do expand in the oven. Place shaped dough on a parchment-lined baking sheet and make sure to leave the space between each dough.
Beat the remaining Egg (1) and brush on the bagel.
Sprinkle toppings of choice.
Bake for 25-30 minutes until golden brown.
Allow bagels to cool on the tray for 10 minutes before transferring to a wire rack to cool for another 10 minutes.
Slice and serve! To store: Once cooled place in an airtight container and freeze for up to 3 months.
