Step 1
Preheat oven to 375 degrees F (190 degrees F).

In a mixing bowl combine the dry ingredients:
All-Purpose Flour (2 1/4 cups)

Baking Powder (1 Tbsp)
, and
Kosher Salt (1/2 Tbsp)

Step 3
Into the dry mixture, combine
Greek Yogurt (1 1/2 cups)
and
Eggs (2)
. Mix slowly until sticky dough forms.
Step 4
Flour the clean surface. Transfer the dough to the surface and flour the top of the dough. Divide the dough into six equal sections.
Step 5
Roll each section in flour and knead about 10-15 times until no longer sticky.
Step 6
Flour your thumb and poke a hole in the center and slowly push it out to be 4 to 5-inch diameter. Make sure the hole is a little larger than you want them to bake as they do expand in the oven. Place shaped dough on a parchment-lined baking sheet and make sure to leave the space between each dough.
Step 7
Beat the remaining
Egg (1)
and brush on the bagel.
Step 8
Sprinkle toppings of choice.
Step 9
Bake for 25-30 minutes until golden brown.
Step 10
Allow bagels to cool on the tray for 10 minutes before transferring to a wire rack to cool for another 10 minutes.
Step 11
Slice and serve! To store: Once cooled place in an airtight container and freeze for up to 3 months.
