Place the Tomatoes (2) , Red Onion (1) , Fresh Cilantro (3 1/2 Tbsp) , Garlic (1 clove) , 2 Tbsp of Lime (1) , Salt (1/2 tsp) , Ground Black Pepper (1/4 tsp) , Ground Cumin (1/4 tsp) , Chili Powder (1/4 tsp) , and Extra-Virgin Olive Oil (1 Tbsp) in a food processor and blitz for 10-30 seconds until blended into fine pieces (Don’t blend for too long, you still want small pieces, not a paste)

Refrigerate for 30 minutes before serving for the best flavor.
