In a small bowl, combine Powdered Confectioners Sugar (1 cup), Cream Cheese (4 ounce), and Milk (1 cup). Stir until creamy, adding an additional tablespoon of milk, if needed. Set aside, this will be your glaze for later.
In a medium bowl, combine All-Purpose Flour (1 cup), Granulated Sugar (2 tablespoon), Baking Powder (2 teaspoon), and Salt (1 teaspoon). Mix well.
In a large bowl, combine Milk (1 tablespoon), Egg (1), Butter (2 tablespoon), and Almond Extract (1/2 teaspoon). Using a mixer or spoon, mix wet ingredients until creamy.
Gradually add the flour mixture to the wet ingredients, stirring until batter is free of lumps.
Place a skillet over medium heat and spray with cooking spray. Slice the Fresh Strawberry (1 cup).
When the skillet is hot, add batter in 1/4 cup batches. Add Sprinkles (to taste) and sliced strawberry to each pancake before flipping, about 3 minutes on one side then flip.
Cook other side for another 3 minutes. Then remove from heat, repeating the process until batter is gone. (Spray skillet with cooking spray before each new batch.)
Heat the glaze in the microwave for 10-second intervals, stirring after each, until smooth. Pour over pancakes and top with extra strawberry and sprinkles.
