Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
On a baking sheet, toss the Cherry Tomatoes (4 cups) , Garlic (6 cloves) , Fresh Thyme (6 sprigs) with Extra-Virgin Olive Oil (to taste) . Season with Salt (to taste) and Ground Black Pepper (to taste) .
Step 3
Place Sourdough Bread (5 slices) slices alongside the tomatoes, allowing to soak up the excess olive oil.
Step 4
Roast until the tomatoes are beginning to burst and bread is toasted, approximately 30 minutes.
Step 5
Spread Ricotta Cheese (1 cup) on toasted sourdough and top with tomatoes. Season with salt and pepper, if needed. Serve and enjoy!
