Preheat oven to 375 degrees F (190 degrees C).
On a baking sheet, toss the
Cherry Tomatoes (4 cups)
Garlic (6 cloves)
Fresh Thyme (6 sprigs)
Extra-Virgin Olive Oil (to taste)
. Season with
Salt (to taste)
Ground Black Pepper (to taste)
Sourdough Bread (5 slices)
slices alongside the tomatoes, allowing to soak up the excess olive oil.
Roast until the tomatoes are beginning to burst and bread is toasted, approximately 30 minutes.
Ricotta Cheese (1 cup)
on toasted sourdough and top with tomatoes. Season with salt and pepper, if needed. Serve and enjoy!
